Australian - Cookie - Anzac Biscuits By Cowgirl

1/2 c flour
1/3 c sugar
2/3 c coconut
3/4 c rolled oats
50 gr butter
1 Tbsp. golden syrup
1/2 tsp. Baking soda
2 Tbsp. boiling water


Mix flour, sugar, coconut, oats. Melt butter and syrup together. Dissolve soda in water and add to butter-syrup mix. Stir butter mix into dry ingredients. Place level tablespoonsful onto cold greased trays. Bake at 180°C (360°F) for about 15 minutes until golden. Cool on racks.

1 cup Rolled Oats 1/2 c Self Raising Flour 1/2 c plain flour 3/4 c desiccated coconut 3/4 c sugar (raw, brown or white) 1/2 tsp bicarbonate of soda 2 Tbls. boiling water* 125g (4oz) butter -- melted 2 Tbls. golden syrup* Preheat oven to 325° FMix all dry ingredients. Dissolve bicarb of soda in boiling water and add to melted butter and golden syrup. Add to dry ingredients and mix well. Place in teaspoonfuls on greased slide. Allow plenty of room for spreading.
