Asian - Salad Napa Slaw
1/2 cup thai fish sauce (nam pla)1/2 cup rice wine vinegar
1/2 tbsp. red pepper flakes
8 large basil leaves -- cut lengthwise 1/4"
1 1/2 tsp. sugar
3 cups napa cabbage -- cut 1/8" ribbons
1 cup carrots -- shredded
1 cup bean sprouts
1/2 cup scallions (green part only) -- cut 1/8" thick
In a large bowl, combine the fish sauce, vinegar, pepper flakes, basil, and sugar and whisk to blend.
Add the cabbage, carrots, bean sprouts, and scallions and toss well. Season with the salt and pepper to taste and allow to rest to flavor, about 3 minutes. Serve.

2 cups seeded fresh litchis, cut into halves 2 cups diced papaya 2 cups diced pineapple 1/3 cup mayonnaise 2 teaspoons lemon juice. Combine the fruit and add the lemon juice. Chill thoroughly. Add the mayonnaise, mix and serve on lettuce leaves.
