Asian - Salad - Chinese Cucumber Salad

8 medium cucumbers
1/4 teaspoon salt
1/8 teaspoon sugar
1 1/2 teaspoons mild curry powder
2 tablespoons honey
1 teaspoon orange juice
1 teaspoon fresh grated orange rind
1/4 cup rice wine vinegar
1/3 cup sesame oil
1 cup mandarin oranges, drained
1 cup pineapple chunks, drained


Peel cucumbers and slice lengthwise; remove seeds. Rub with salt and sugar. Cut into quarters; crush with the back of a spoon. Combine curry powder, honey, orange juice, rind, vinegar and oil. Pour over cucumbers. Add oranges and pineapple. Cover and set aside for at least 1 hour before serving. Makes 4 servings.
