Appetizers - Vegetable Cucumber-cheese Slices

3 fresh ripe Cucumbers
2 packages Cream Cheese with Chives (3-oz. ea.)
1/4 cup Pimiento-stuffed Olives

Allow cream cheese to soften while you finely chop the olives.

Cut each cucumber in half length-wise. Scoop out the seeds with a spoon or melon baller, and discard. Divide the cream cheese mixture between the cukes, filling in the hollows (where the seeds used to be).
Restore each cucumber to its original shape by pressing halves together firmly. Wrap each in plastic film, and chill until almost time to serve.

At that point, remove from refrigerator and - with a sharp knife - carefully cut each cucumber cross-wise
into about a dozen slices, each about 1/2-inch thick.

1 English (Hothouse) Cucumber -- Sliced 1/3" Thick Mayonnaise Dill Weed, Fresh -- Finely Chopped Seasoned Salt (Lowerys) Bread Slices (Any Type) -- Cut- Various Shapes With an English (seedles) cucumber you can either peel it, leave it unpeeled or run the tines of a fork down it to make a design. Recipe courtesy Julie Lau 4 large cucumbers, diced 6 vine ripe tomatoes, diced 1 tablespoon cilantro, finely chopped 1 medium red onion diced 1 diced jalapeno 1/2 cup rice wine vinegar 1 packet dry ranch dressing Salt and pepper, to taste Combine ingredients in a large bowl. Add vinegar, ranch dressing, salt and pepper, and toss until well coated. Add a pinch of sugar to balance vinegary taste
