Appetizers - Mexican Chili Cheese Dip

2 Tbsp. butter
2 eggs
2 (1 lb.) cans chili with beans
1 lg. can hominy, drained
1 (1 lb.) Mexican flavor Velveeta cheese (mild or spicy), diced


In large saucepan, scramble eggs in butter.

Add chili and hominy; simmer 20 minutes.

Add Velveeta a little at a time and stir until melted.

Serve warm with Fritos Scoopers or tortilla chips.

If desired, transfer dip to crockpot to keep it warm.

1 can (15 ounce) chili without beans 1 pound Velvetta® cheese 1 (4 ounce) can chopped hot peppers. Mix and heat in a microwave, or crockpot. Stirring until each loses it's identity. Can be doubled or tripled, or whatever depending on the size of your crockpot. Serve with corn chips.

4 fresh anaheim chiles 2 T vegetable oil 1 yellow onion, peeled and chopped 2 cloves garlic, finely chopped 1 lb. grated white cheddar cheese 1 T sour cream Char the chilies in the broiler of your oven. Place them in a paper bag to steam off the skin. Rub off the skin, stem, seed and coursely chop. Heat oil in a large skillet and add onion and garlic and cook slowly until transluscent.
