Appetizers - Dip Feta Cheese Dip

2 Large sweet red peppers
1 cup Crumbled feta cheese
2 tsp Red wine vinegar
Pinch Each granulated sugar and cayenne Pinch


Place peppers on greased grill over medium-high heat; close lid and cook, turning often, for 15 to 20 minutes or until charred. Let cool; peel and seed.

In blender or food processor, puree together peppers, feta cheese, vinegar, sugar and cayenne.

(Dip can be refrigerated in airtight container for up to 5 days; let stand at room temperature for 30 minutes.)

Serve with pitas, flatbreads or crisp.

Makes 1 cup (250 mL).

1 1/3 cups mayonnaise 1 1/2 cups sour cream 2 Tbsp. minced onion 2 Tbsp. chopped dill 2 tsp. Beau Monde seasoning (Spice Islands) 1 tsp. parsley flakes 1 loaf rye bread or pumpernickle (round), unsliced Mix mayonnaise, sour cream, minced onions, chopped dill, Beau Monde seasoning and parsley flakes. Chill dip for serveral hours or overnight to bring out the flavors. Hollow out the center of loaf of round, unsliced rye bread. Save chunks from center. Fill hollow of rye bread with dill dip. Use rye bread chunks for dipping.
