Appetizers - Dip - Dana's Pina Colada Fruit Dip

1 (8 ounce) can crushed pineapple with juice, undrained
1 (3 1/2 ounce) package vanilla instant pudding mix
1 teaspoon coconut extract
3/4 cup milk
1/2 cup sour cream
mixed fruit


In food processor or blender combine all ingredients. Cover; blend for 30 seconds (if using a blender, stir after 15 seconds). Refrigerate for several hours to blend flavors. Serve with fresh fruit.

1/3 cup sugar 4 tsp. cornstarch 1/4 tsp. salt 1 cup unsweetened Pineapple Juice 1/4 cup orange Juice 2 eggs, beaten 1 (3 oz.) pkg. cream cheese, softened Combine dry ingredients in a saucepan. Blend in fruit juices. Cook, stirring constantly until thick and bubbly (about 5-8 minutes). Slowly stir some of this hot mixture into the eggs. Return to saucepan and cook over low heat, stirring constantly for 3-5 minutes or until mixture thickens slightly. Cool 5 minutes. Soften cream cheese and beat into cooled mixture. Chill. Makes 2 cups.

1 c. mayonnaise 1 c. shredded Swiss cheese 1 c. chopped onion Mix all together in a pyrex pie plate. Bake at 350 degrees for 30 minutes. Serve hot with assorted crackers.
