Appetizers - Chicken Wings - Buffalo Wings By Ron

Buffalo Wings

Blue Cheese Dressing:
1 oz. blue cheese
1/4 cup mayonnaise (Don't use miracle whip)
1/4 cup sour cream or yogurt

Buffalo Wings:
2 1/2 pounds chicken wings, tips removed and cut in 2
1/4 cup butter
3-5 tablespoons hot red pepper sauce
1 1/2 tablespoons red wine vinegar
oil for frying

Place dressing ingredients in food processor and whip the chill.

Melt butter in large saucepan, stir in hot sauce (3 tablespoons is relatively mild) add vinegar set aside. Heat oil in a large heavy saucepan, add wings a few at a time cooking about 10 minutes or until brown a crisp. Remove to a paper towel and drain. When all wings are cooked, reheat hot sauce and toss with wings to coat.

This recipe is supposed to be the REAL Buffalo Wing recipe from the Anchor Bar in Buffalo. The Sauce--This makes enough for about 30 "wingettes" 6 T (3 oz.) of FRANK'S Louisiana Hot Sauce (now Durkee's) 1/2 stick of margarine (not butter!) 1 T white vinegar 1/8 t celery seed 1/8 to 1/4 t Cayenne pepper 1/4 t red pepper 1/8 t. garlic salt dash black pepper 1/4 t Worcestershire Sauce 1 to 2 t Tabasco Sauce Mix all the ingredients in a small sauce pan over low heat until the margarine is completely melted.
