Appetizers - Chicken Liver Spread

Ingredients~
1/2 cup butter
3 cups Spanish onions - chopped
1 lb chicken livers
2 hard-boiled eggs
1/4 cup fresh parsley - chopped
1/4 cup mayonnaise
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
2 tablespoons fresh parsley, extra - chopped

Method~
Melt butter in a large heavy skillet.

Add onions and chicken livers and saute, stirring until livers are slightly browned.

Cool slightly, then drain off any juices.

Combine liver and onions with eggs and parsley in a food processor and blend until smooth.

Mix in the mayonnaise, salt, pepper and Worcestershire sauce.

Chopped Chicken Liver 4 T. butter 3 medium onions, chopped 1 lb fresh chicken livers, cleaned 4 large eggs, hard-boiled salt and pepper to taste Heat the butter in a skillet. Add the onions and saute over low heat until caramelized, about 25 minutes. Raise the heat. Add the chicken livers, turning occasionally, until they are cooked through, but still slightly pink inside. Chop together the onion-liver mixture and the eggs using a manual chopper or a food processor until finely chopped, but not pureed.
