Appetizers - Chicken - Chicken Puffs

2 tb Butter
1/4 c Flour
Dash of salt
1 Egg
1/4 c Swiss Chesse (Shredded)

2 c Chicken (Cooked, Fine Chop)
1/4 c Celery (Finely Chopped)
2 tb Pimento (Chopped)
2 tb Dry White Wine
1/4 c Mayonnaise
Salt and Pepper to taste

Melt butter in 1/4 cup boiling water. Add flour and a dash of salt; stir vigorously. Cook and stir until mixture forms a ball that doesn't separate.

Remove from heat and cool slightly. Add egg; beat vigorously until smooth. Stir in cheese. Drop dough onto greased baking sheet, using 1 level teaspoon dough for each puff. Bake at 400øF for 20 minutes.

Remove from oven; cool and split.

Combine ingredients for filling and mix well. Fill puffs and serve.

1 (8 oz) package cream cheese, softened 1/4 C. Mayo (salad dressing is OK too) 2 Tablespoons lemon juice 1/2 teaspoon salt 1/4 teaspoon pepper 4 drops of Tabasco 2 C. chopped cooked chicken (or about 4 cans of chicken) 2 hard cooked eggs chopped 1/4 C chopped green onion Mix together and form the log, or ball and refrigerate at least 4 hours. 2 Tblsp. Butter or margarine 1 cup finely chopped pecan pieces 1 cup finely chopped cooked chicken 2 cup chopped celery 1/4 cup mayonnaise or salad dressing 1 Tblsp. Dijon mustard 1 pkg. (3 oz.) Cream cheese 1/4 tsp. Salt 2 tsp. Ground nutmeg 1 pkg. (7.5 oz.) Regular refrigerated biscuits Preheat oven to 425 degrees. In a large skillet, melt butter; add pecans and sauté until lightly browned. In a bowl, combine chicken, celery, mayonnaise, mustard, cream cheese, salt, and nutmeg. Add pecans; mix well. Separate biscuits; roll each into a 4-inch circle. Press into 10 foil bake cups,
