Appetizers - Cheese Spread

1/2 tsp. celery salt
2 tsp. garlic salt
3 Tbls. plus 2 teas. lemon juice, fresh squeezed
2 tsp. tabasco
1 tsp. paprika
1 pound margarine (regular cubed like Imperial or Blue Bonnet, etc.)
3/4 pound cheddar cheese (grated fine)
3 ounces romano cheese

Mix all with electric mixer until well blended and store covered in refrigerator.

1 ripe pinapple 8 oz cream cheese 1/2 cup well aged cheddar, grated(i just used sharp) 1 TBS minced chives 1/4 tsp dry mustard 1 TBS white rum 1/4 tsp salt-optional Cut off the top of the pineapple far enough down so that a wide rim is formed.Scoop out the fruit and chop it fine and blend together cheeses, chives, 1 1/2 cup of the chopped pinapple, mustard, rum and salt.

1/4 pounds (about 1 1/2 cups), extra-sharp white Cheddar, grated 3 celery ribs,(about 1 cup), chopped fine 1 medium red onion, (about 3/4 cup), chopped fine 3/4 cup mayo 2 1/2 tsp Dijon mustard 1 1/2 tsp drained bottled horseradish In a bowl toss together Cheddars, celery, and onion abd stir in remainingingredients and pepper to taste until combined well. Spread keeps covered and chilled for 1 week. Serve with crackers. Makes about 3 cups. Note: Hand grating the cheese works best. A food processes grates it too fine. This also doubles well.
