Appetizers - Cheese - Blue Bites

1 (15-oz.) pkg. Pillsbury® Refrigerated Pie Crusts, softened as directed on package
4 oz. cream cheese, softened
2 oz. (1/2 cup) crumbled blue cheese
3 tablespoons half-and-half
1/4 teaspoon salt
1 egg
1/2 cup walnut pieces or halves
1/2 cup small fresh parsley sprigs

Heat oven to 375°F. Remove crusts from pouches; unfold crusts. With 2 1/2-inch round cutter, cut 12 rounds from each crust. Press each round in bottom and up sides of ungreased miniature muffin cup.

In medium bowl, combine cream cheese and blue cheese; beat until smooth. Add half-and-half, salt and egg; blend well. Spoon 1 scant tablespoon mixture into each crust-lined muffin cup. Top each with 2 walnut pieces or 1 walnut half.

Bake at 375°F. for 15 to 20 minutes or until filling is set and crust is light golden brown. Cool 5 minutes. Remove from muffin cups. Garnish with parsley.

Double Crust Rich Butter Pastry: 2 cups all purpose flour 1/2 teaspoon salt 1 cup butter 6 tablespoons water Preheat oven to 400° F.In a medium bowl combine flour and salt. With pastry blender or fork, cut in butter until pieces are size of small peas. Add 6 tablespoons water and toss with fork until all flour is moistened and mixture starts to form aball. If necessary, add 1 or 2 more tablespoons water to crumbs in bottom of bowl. Gather dough in your hands and gently shape into a ball. Divide pastry mix into 3 equal portions. Put 2 portions

Appetizers - Cheese -  Bit Of Brie
One 14 oz round of Brie 1 TBL. butter 1 cup finely chopped pecans, toasted 1/3 cup Kahlua 1/4 cup packed brown sugar Remove top rind of the Brie. Place on a microwave safe platter. Heat the butter in a saucepan until melted. Add the pecans and mix well. Cook for 5 minutes, stirring frequently. Stir in the Kahlua and brown sugar. Spoon the pecan mixture over the Brie, spreading to the edge. Microwave on high 1 minute; turn the platter. Microwave on High for 45 seconds longer or until bubbly. Serve w/melba toast round or French bread slices. Serves 12.
