Appetizers - Cheese Ball - Chili Cheese Balls Presto

3 tablespoons Jalapeno chilies - chopped
1 Parmesan cheese (8 oz) - grated
1 package cream cheese (8 oz)
2 egg yolks
1/2 cup Virginia type peanuts - chopped roasted
shelled
Bread crumbs

Mix chilies, cheeses, and egg yolks together until well blended; add peanuts. Form into 1-inch balls. Roll in bread crumbs; refrigerate. Cook 3 or 4 at a time, until they float in oil and desired browness is reached (about 2 minutes). Remove from oil and drain on absorbent paper. Repeat until all Cheese Balls are cooked.

Makes about 72.

Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into ball. Refrigerate for at least 1 hour. Just before serving, roll cheese ball in pecans. Serve with

3 c. grated Monterey Jack cheese1 c. grated Fontina cheese1 (3 oz.) pkg. cream cheese (room temperature)4 tsp. prepared mustard1 tsp. Worcestershire sauce1/2 tsp. garlic powder4 tsp. chili powder, dividedCombine Monterey Jack cheese, Fontina cheese, cream cheese, mustard, Worcestershire sauce and garlic powder with 2 teaspoons chili powder and shape into bite-size balls.Sprinkle remaining chili powder in large bowl. Add cheese balls and toss gently to coat.Chill.Delicious with dried figs and apricots and chilled white wine.Makes 3 1/2 to 4 Dozen.
